Gluten Free Pizza Recipe

Here’s a basic cheese gluten free pizza recipe:
3/4 cup Gluten Free All Purpose Flour Mix
3/4 cup tapioca flour
2 tablespoons dry buttermilk powder OR dry powdered milk
1 teaspoon Agar-Agar powder (Vegan ) OR unflavored gelatin powder
1 teaspoon salt
2 teaspoons xanthan gum
1 package active dry yeast granules
1 teaspoons sugar OR 1/2 teaspoon honey OR agave nectar
2 teaspoons olive oil
1 1/2 teaspoons cider vinegar
1/2 cup lukewarm water (hot water will kill the yeast!)
Extra tapioca flour for rolling the pizza dough
Gluten Free cornmeal to sprinkle on baking sheet
Preheat oven to 400 degrees.
You can use a round pizza pan or a baking sheet. However, if you are using a pizza stone, then make sure you place it into the oven to preheat it.
If you use a baking sheet or pizza pan, line with parchment paper and sprinkle lightly with gluten free cornmeal.
Pin a large bowl, mix all dry ingredients and whisk. Next put in sugar (or honey or agave nectar), vinegar, olive oil and gradually add water. Using a hand mixer, mix on high speed for 3 to 4 minutes. Place the thick dough on to a large clean surface liberally sprinkled with tapioca flour.
After working tapioca flour into the dough, shape it into a large ball. With a large knife cut the dough in half to make two medium pizzas.
Set one piece aside and begin to work on the other. Shape the dough into a circle. Sprinkle enough tapioca flour on the dough and the work surface to prevent it from sticking.
Use a rolling pin shape the dough into circles.
Now place one prepared pizza crust on baking sheet or pizza stone and sprinkle with corn meal.
Bake crust for about 5 minutes or until the dough is firm.
Repeat the process with second pizza crust. Set aside.
2 tablespoons good quality olive oil (adds flavor!)
1/2 cup good quality pizza sauce
2 teaspoons gluten-free Italian herb blend seasonings OR gluten free dried oregano
4 ounces freshly grated provolone cheese
1 ounce freshly grated parmesan cheese
Raise oven temperature to 450° F
Brush each pizza crust with 1 teaspoon olive oil.
Spoon and spread 1 heaping tablespoon pizza sauce on each pizza.
Add an ounce provolone and 1/4 ounce parmesan on each pizza.
Sprinkle each pizza with about 1/2 teaspoon Italian herbs or oregano.
Bake in preheated oven for about 12 minutes or until cheese is bubbly and crust is golden brown.

Garlic Paste Ingredients
2 tbsp extra virgin olive oil
1 clove garlic, roasted
Gluten-Free Pizza Crust
1 oz baby spinach, shredded
2 oz feta cheese, crumble
Kalamata olives, pitted and sliced
8 sun-dried tomato pieces, sliced
Preheat oven to 400° F / 204° C
To make the garlic paste:
Make a paste with garlic and oil. (You can prepare this up to 3 days in advance for more intense garlic flavor!) Refrigerate until ready to use.
To make the pizza:
Brush GF pizza crust with garlic infused olive oil as the “sauce” layer. Artfully garnish with the remaining ingredients. Place in preheated 400°F oven for 5-10 minutes. This is a very light and healthful pizza. Enjoy!
